It's almost Cinco de Mayo which falls on TACO TUESDAY this year! Truly a match made in heaven. Well, we're going to mix it up this year and make these crispy, baked black bean taquitos with a spicy queso dip. This combo is out of this world and guess what else? It's entirely vegan! While the spicy queso dip might be a non-negotiable...These taquitos also pair well with sour cream, salsa and/or guacamole. YUM! Make sure you have all of the ingredients to whip these up for your Mexican feast on Cinco de Mayo and you can thank me later!
Ingredients:
2 (15oz) cans black beans, drained and rinsed
½ yellow onion, diced
1 C coconut milk
1 tsp chili powder
1 tsp paprika
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tbsp apple cider vinegar
Avocado oil spray
8-10 corn tortillas (taco size)

Additional Supplies:
Medium saucepan
Potato masher
Baking sheet
Directions:
Preheat oven to 415 deg (F).
Add all ingredients except tortillas and avocado oil to a medium saucepan on med/high heat. Bring to a boil, then reduce heat and let simmer for 6-8 minutes.
After the beans have simmered, remove from heat. Mash the beans with a potato masher continuously for 2 minutes. Once 2 minutes is over, the mixture should be significantly thicker, resembling a thinner version of refried beans. Cover and set aside.
Heat tortillas in the microwave for 30 seconds until soft. Spray the baking sheet generously with avocado oil
NOTE: If you don’t have avocado oil spray, rub 1-2 tbsp of avocado or olive oil on the entire surface of the baking sheet.
One at a time, take a tortilla, place a few scoops of the bean mixture into the center of the tortilla. Working from one side to the other, roll your taquitos, then place seam side down on the baking sheet. Repeat until all tortillas are filled.
Spray the tops of the taquitos with more avocado oil (this helps them to crisp up!). Place in the oven and bake for 18-20 minutes until crispy and golden brown. Serve!
