Roasted Red Pepper & Turkey Wrap


Coming at you with another quick & easy lunch recipe that I know you're going to love! I thought this was a fun twist on the regular old turkey wrap and it turned out delicious. You can throw in any other types of veggies you have on hand as well - shredded carrots, spinach, red onion, tomatoes or cucumbers would all be great in this! I think the real kicker is the cream cheese...YUM. Full recipe below:



Ingredients (1 serving):

1 large tortilla or wrap

3-4 slices roasted turkey

2 tbsp cream cheese (I used herb & onion flavored cream cheese)

1 jarred roasted red pepper, sliced into strips

1 small handful arugula

1 tsp lemon juice

1 tsp olive oil

salt & pepper to taste

2-3 slices avocado


In a small bowl, combine arugula, lemon juice, olive oil, salt and pepper. Mix.Place your tortilla on a large cutting board or plate. Spread cream cheese on the wrap. Add avocado slices, turkey, red peppers, and arugula mixture on top. Fold in the sides and roll like a burrito. Cut in half and serve!
