Friendly reminder that cooking at home does not have to be complex, time consuming or break the bank. When I put meals together, I try to think of three elements: a protein, a veggie & a grain. In this instance, I looked at what I had and decided to put together frozen meatballs, frozen broccoli, and rice to make teriyaki bowls. You could easily use a premade teriyaki sauce (we love @bbq or @sidedish peanut sesame sauce), or you can make your own like I did! Just like that, dinner is ready in 15 minutes and everyone is happy! Keeping it simple is always best. I included the recipe for my homemade sauce below!
Ingredients:
1/4 C soy sauce
1 tsp sambal chili sauce
1 tbsp rice vinegar
1 tsp sesame oil
2-3 cloves garlic, minced
1 tsp grated fresh ginger
1/4 C water
2 tsp cornstarch
Sauce
Heat a nonstick saucepan over medium heat. Add soy sauce, sambal, vinegar, sesame oil, garlic and ginger. Cook until just starting to bubble, about 2-3 min. Whisk cornstarch into water. Slowly whisk cornstarch mixture into sauce. Cook until bubbly, about 2-3 additional minutes. Remove from heat and serve!
Teriyaki bowls: white rice, steamed broccoli, meatballs (sub chicken), diced snap peas, sesame seeds & sauce.
