Have you ever tried broccolini? For someone like me who eats a ton of broccoli, it doesn't really ever cross my mind to buy broccolini...But every time I do I am pleasantly surprised with how much I love it! It's like a milder, sweeter, more elegant cousin to our regular every day broccoli. Fancy broccoli, if you will! It makes a very beautiful side dish to any protein, and can really lend itself to a ton of different cuisines. This is a classic preparation with garlic and lemon, and can be eaten as a side dish, or chopped up and incorporated into pasta, quinoa, a rice pilaf, etc. So yummy. Ingredients (4 servings):
10-12 stems of broccoliniZest from 1 lemon
Juice from 1/2 lemon
4 cloves garlic, minced
1 shallot, diced
2 tbsp olive oil
1/4 C water
Sprinkle of Salt & pepper + more to taste
Instructions:
Heat a large skillet over med/hi heat. Add oil. Once oil is shimmering, add garlic and shallot. Cook 1-2 min until fragrant, stirring constantly to make sure garlic doesn't burn. Cut 1 inch off the ends of the broccolini stocks. Add to skillet and toss to coat in oil. Season with salt & pepper. Let cook 2-3 min, stirring often. Add water to skillet, cover and cook additional 2 minutes. Remove lid, add lemon juice and lemon zest. Stir and serve!
