If I had to choose between red or green salsa, I would choose green salsa any day of the week. It is my FAVORITE and it's about time I post my recipe for this roasted tomatillo salsa! It is so easy to make and there's nothing like fresh salsa to elevate homemade tacos, burritos, nachos...you know the drill. Can't wait for you all to make this one. Full recipe below:
Ingredients (6-8 servings):
10-12 tomatillos, husks removed 1 yellow onion, cut into quarters 3 limes, juiced 1 fresh jalapenos, cut in half with seeds & membranes removed 1 tsp sea salt + more to taste 3-4 cloves garlic 1 large handful fresh cilantro leaves 2-3 tbsp olive oil 1C cold water + more if needed Directions: Preheat your oven to 425 deg. Cut tomatillos in half. Place tomatillos, onions, jalapeno and garlic on a baking sheet. Drizzle with olive oil and season with sea salt. Bake for 12 minutes. Once finished baking, turn your broiler on high and broil for 2-3 min, watching carefully so the veggies don't burn. Carefully add the contents from the baking sheet to a blender or food processor. Add lime juice, cilantro leaves and water. Blend (remember to leave an opening for the steam to vent!!) until smooth. Add more water as needed to thin out the salsa. Place in the fridge to chill and serve!
